Generally speaking, the French chips give wine a higher complexity, are better indicated for the refining stage and better respect to varietal notes. The aromatic tones which are perceived are: spiced, smoked, vanilla and soft leather.

As a guide, use 30g of Oak Chips per 5 gallons of wine must or 6g per gallon. These are superior roasted French Oak chips and not at all like the dusty, powdery style of wood chips commonly available.
